This ripe tea cake’s ingredient (tea leaves) is from Xishuangbanna 西双版纳 around Lancang River 澜沧江 in Yunnan. All big tea leaves must be roughly processed into Maocha to stop oxidation. The processing steps are Pan-roasting 70C (杀青)which arrests most enzyme activity in the leaf and prevents full oxidation -- Rolling (揉捻) -- Sun Drying (晒干)—Aging Processing Technique (渥堆)Which is by prolonged bacterial and fungal fermentation in a warm humid environment under controlled conditions.—  Steaming and Shaping— Sun Drying(干燥)
